Taking on turkeys: 2

The turkeys went too far. They killed two of our roosters, albeit they were headed for the pot too.

We found the turkeys leaning over the bodies, pecking at them. How they actually carried out the murders we don't know, but there are no other suspects.

So, what do we do with five free range turkeys that are now in the freezer?

Roast turkey, obviously, but I'd like some other ideas too... keeping in mind that because the turkeys have been running around outside they'll have leaner, darker meat.

Any suggestions?

  1. Turkey burgers, turkey mince, turkey sausages, coq au vin, bits of turkey stuffed and wrapped in prosciutto and pan fried....

    The first three are apparently quite popular in the states

  2. Yeah Eliza- turkey mince is delicious as a meat loaf wrapped in bacon or pancetta, turkey spring rolls with savoy cabbage and plum sauce, mmm and turkey steaks from the breast, egg and bread crumbed, quickly pan fried and served with beetroot marmalade. Plenty of options- poor roosters....

  5. Thanks for the tips, we haven't been too adventurous so far. We had a traditional turkey roast for Easter Sunday, which was fantastic. Nice and moist and full of flavour.
    We have decided to keep a trio of turkeys for next year. Since they have lost their mates they have been less threatening to other animals. Not sure how we stop them from sleeping on the roof though. We plan to add some rare breed turkeys next year.

  6. Turkey breast rolled and stuffed with spinach and garlic and breadcrumbs. Cook slowly in the oven, then make a sauce from the drippings adding plain yoghurt. The creamy sauce would go very well with the darker meat. I'll come over and help out with the tasting and feasting, natch.

    Are you sure the turkeys killed the cockerels if you didn't see it happen? Something was killing our young guinea fowl and we weren't sure what, until we saw a hawk flying out of the woodshed (where the guinea fowl and the hens roost is)...
